Caramel Apples – perfect for Halloween but truly – Whenever you feel like it!
Thick chewy and delicious
Best of all it’s easy to make!

– 8-9 good size Green Apples (washed and cold)
Recipe
– popsicle or other type of stick inserted all the way into the apple
1 cup Heavy Cream
1 cup Corn Syrup (clear or golden)
2 cups Packed brown sugar (light or dark … dark will give a deeper flavour)
1/4 cup Unsalted Butter
1 tsp salt
1.5 tsp vanilla
Place all ingredients, except vanilla, in a medium to large pot.
Stir ingredients together and cover with lid.
Cook over medium high with lid until mixture reaches about 220F.
DO NOT STIR
Remove lid and continue to boil until mixture reaches 240-245F
DO NOT STIR
Once temp is reached – remove from heat and allow to cool to about 200F – add vanilla and stir gently to avoid air bubbles.
While caramel is cooling – place sticks in apples.
Once cooled
Dip apples in caramel turning stick to coat whole apple.
I find it easiest to tip the pot up on one side so caramel all pools and is deeper.
Allow excess to drip off and scrape bottom along the pots edge.
Allow to sit in parchment paper until caramel is fully set.
If caramel starts to set on you in pot – gently warm on stove until around 200F
Best way to enjoy is to cut from the core – but of course you can absolutely just dive in face first.
